- 8 ounces medium shrimps tails and shells intact
- 2 chopped onions
- 12 crushed garlic
- 2 Jalapeño Peppers halved
- ¼ cup dry white wine
- 1 tablespoons butter
- 2 tablespoons all purpose flour
- 1 teaspoon salt
- ¾ cup whipping cream
- 6 cups of water
- 3 tablespoons cilantro leaves
- 1 avocado deseeded and chopped
- 6 lime wedges
- 1 pound black snapper fillets
Method of Preparation
This soup can be prepared in a few easy steps as mentioned below :
In a saucepan sauté the shrimps, garlic, onion and peppers for 3 minutes.
Now you can add dry white wine and sauté for another 3 minutes till all the water evaporates.
Now you can add water and let it boil for 40 minutes or till the quantity of water is reduced to half.
Now strain this liquid over a bowl and discard all the solids.
Melt butter in another pan and add flour and cook for a minute.
Add a cup of shrimp broth stirring to develop a proper consistency.
Now add the remaining two cups of shrimp broth.
Add cream, salt and saffron and bring to a boil.
Cook for 5 minutes stirring occasionally.
Add fish flakes and shrimp evenly.
Serve in bowls topped with cilantro leaves and chopped avocado.
Decorate with lemon wedges.
